Ingredients:

  • 6-8 slices of day-old bread, crusts removed
  • Butter, softened
  • 1/2 cup raisins or sultanas (optional)
  • 3 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Ground cinnamon or nutmeg, for sprinkling
  • Demerara sugar (optional), for sprinkling on top

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a baking dish with butter.
  2. Butter each slice of bread on one side and cut them into triangles or squares.
  3. Arrange half of the bread slices, buttered-side up, in the bottom of the prepared baking dish. Sprinkle half of the raisins or sultanas (if using) over the bread.
  4. Arrange the remaining bread slices, buttered-side up, on top of the first layer. Sprinkle the remaining raisins or sultanas (if using) over the bread.
  5. In a large mixing bowl, whisk together the eggs, milk, heavy cream, granulated sugar, and vanilla extract until well combined.
  6. Pour the egg mixture evenly over the bread slices in the baking dish, making sure all of the bread is soaked.
  7. Allow the bread to soak in the egg mixture for about 10-15 minutes, pressing down gently with a fork or spatula to ensure the bread absorbs the liquid.
  8. Sprinkle ground cinnamon or nutmeg over the top of the pudding, to taste. You can also sprinkle some demerara sugar on top for extra sweetness and crunch.
  9. Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the pudding is set and golden brown on top.
  10. Remove the pudding from the oven and let it cool for a few minutes before serving.
