Ingredients:

  • 1 lb breakfast sausage (pork or turkey), casings removed
  • 1 onion, diced
  • 1 bell pepper, diced
  • 6 slices bread, cubed (day-old bread works well)
  • 2 cups shredded cheddar cheese
  • 8 large eggs
  • 2 cups milk
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional toppings: chopped fresh parsley, sliced green onions, hot sauce

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. In a large skillet, cook the breakfast sausage over medium heat, breaking it up with a spoon, until browned and cooked through. Remove the cooked sausage from the skillet and set aside.
  3. In the same skillet, add the diced onion and bell pepper. Cook for 5-7 minutes, or until softened. Remove from heat.
  4. Spread half of the cubed bread in an even layer in the prepared baking dish. Top with half of the cooked sausage, sautéed onion and bell pepper mixture, and shredded cheddar cheese.
  5. Repeat with the remaining cubed bread, sausage, onion and bell pepper mixture, and shredded cheese.
  6. In a large mixing bowl, whisk together the eggs, milk, Dijon mustard, salt, and black pepper until well combined.
  7. Pour the egg mixture evenly over the ingredients in the baking dish, making sure everything is well coated.
  8. Cover the baking dish with foil and refrigerate for at least 2 hours, or overnight, to allow the flavors to meld and the bread to soak up the egg mixture.
  9. When ready to bake, preheat your oven to 350°F (175°C). Remove the foil from the baking dish.
  10. Bake the casserole in the preheated oven for 45-50 minutes, or until the top is golden brown and the eggs are set.
  11. Remove the casserole from the oven and let it cool for a few minutes before slicing and serving.
