Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 10–12 rings canned pineapple, well-drained and patted dry
  • Additional sugar for sprinkling (to taste)

Instructions

  1. Preheat Oven: Set oven to 350°F (180°C). Line baking trays with parchment paper.
  2. Cream Butter & Sugar: In a large bowl, beat softened butter and sugar until light and fluffy (2–3 minutes).
  3. Add Egg & Vanilla: Beat in egg and vanilla extract until smooth.
  4. Mix Dry Ingredients: In another bowl, whisk flour, baking soda, and salt. Gradually add to wet mixture until a soft dough forms.
  5. Shape Cookies: Scoop ~2 tbsp dough per cookie onto trays, spacing 2 inches apart.
  6. Add Pineapple: Press a dried pineapple ring onto each mound of dough, flattening slightly. Trim or halve rings if needed.
  7. Bake: Sprinkle lightly with sugar. Bake 12–15 minutes until golden around edges.
  8. Cool & Serve: Let cool on tray for 5 minutes, then transfer to wire rack. Enjoy warm or at room temp.
