Pineapple Upside Down Sugar Cookies 🍍🍪✨
Soft, buttery sugar cookies topped with sweet pineapple rings—an easy tropical twist on a classic treat!
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 10–12 rings canned pineapple, well-drained and patted dry
- Additional sugar for sprinkling (to taste)
Instructions
- Preheat Oven: Set oven to 350°F (180°C). Line baking trays with parchment paper.
- Cream Butter & Sugar: In a large bowl, beat softened butter and sugar until light and fluffy (2–3 minutes).
- Add Egg & Vanilla: Beat in egg and vanilla extract until smooth.
- Mix Dry Ingredients: In another bowl, whisk flour, baking soda, and salt. Gradually add to wet mixture until a soft dough forms.
- Shape Cookies: Scoop ~2 tbsp dough per cookie onto trays, spacing 2 inches apart.
- Add Pineapple: Press a dried pineapple ring onto each mound of dough, flattening slightly. Trim or halve rings if needed.
- Bake: Sprinkle lightly with sugar. Bake 12–15 minutes until golden around edges.
- Cool & Serve: Let cool on tray for 5 minutes, then transfer to wire rack. Enjoy warm or at room temp.
