Ingredients
- 20 jumbo pasta shells
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- ½ cup water
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack or Mexican blend cheese
- 1 can (15 oz) black beans, drained and rinsed (optional)
- 1 cup corn kernels (optional)
- Fresh cilantro, sour cream, and chopped tomatoes for garnish
Instructions
- Cook Shells: Boil pasta shells according to package directions. Drain and set aside.
- Prepare Filling: In a skillet, cook ground meat until browned. Drain excess fat. Add taco seasoning and water. Simmer until thickened. Stir in salsa, beans, and corn if using.
- Stuff Shells: Fill each shell with taco mixture. Arrange in a greased 9×13 baking dish.
- Top & Bake: Sprinkle with both cheeses. Cover with foil and bake at 350°F (175°C) for 20 minutes. Uncover and bake 5–10 more minutes until cheese is bubbly.
- Serve: Garnish with sour cream, cilantro, and chopped tomatoes. Serve warm.
