Kielbasa Soup

Kielbasa soup is a hearty and flavorful dish. Here’s a simple recipe to make it:

Ingredients:

  • 1 lb (about 450g) smoked kielbasa sausage, sliced into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 red bell pepper, diced
  • 4 cups chicken or vegetable broth
  • 2 cups diced potatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups chopped kale or spinach
  • 1/2 cup heavy cream (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. In a large soup pot or Dutch oven, heat the olive oil over medium heat. Add the sliced kielbasa sausage and cook until browned, about 5 minutes. Remove the sausage from the pot and set aside.
  2. In the same pot, add the chopped onion and garlic. Cook until softened and fragrant, about 3 minutes.
  3. Add the diced carrots, celery, and red bell pepper to the pot. Cook for another 5 minutes, stirring occasionally.
  4. Pour in the chicken or vegetable broth and add the diced potatoes, dried thyme, dried oregano, and bay leaf. Season with salt and pepper to taste.
  5. Bring the soup to a simmer and cook for about 15-20 minutes, or until the potatoes are tender.
  6. Return the cooked kielbasa sausage to the pot. Add the chopped kale or spinach and stir until wilted.
  7. If desired, stir in the heavy cream for added richness and creaminess.
  8. Taste the soup and adjust the seasoning as needed.
  9. Remove the bay leaf from the soup before serving.
  10. Ladle the kielbasa soup into bowls and garnish with chopped fresh parsley, if desired.
  11. Serve hot and enjoy your comforting kielbasa soup!
