Kielbasa soup is a hearty and flavorful dish. Here’s a simple recipe to make it:
Ingredients:
- 1 lb (about 450g) smoked kielbasa sausage, sliced into bite-sized pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 stalks celery, diced
- 1 red bell pepper, diced
- 4 cups chicken or vegetable broth
- 2 cups diced potatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
- 2 cups chopped kale or spinach
- 1/2 cup heavy cream (optional)
- Chopped fresh parsley for garnish (optional)
Instructions:
- In a large soup pot or Dutch oven, heat the olive oil over medium heat. Add the sliced kielbasa sausage and cook until browned, about 5 minutes. Remove the sausage from the pot and set aside.
- In the same pot, add the chopped onion and garlic. Cook until softened and fragrant, about 3 minutes.
- Add the diced carrots, celery, and red bell pepper to the pot. Cook for another 5 minutes, stirring occasionally.
- Pour in the chicken or vegetable broth and add the diced potatoes, dried thyme, dried oregano, and bay leaf. Season with salt and pepper to taste.
- Bring the soup to a simmer and cook for about 15-20 minutes, or until the potatoes are tender.
- Return the cooked kielbasa sausage to the pot. Add the chopped kale or spinach and stir until wilted.
- If desired, stir in the heavy cream for added richness and creaminess.
- Taste the soup and adjust the seasoning as needed.
- Remove the bay leaf from the soup before serving.
- Ladle the kielbasa soup into bowls and garnish with chopped fresh parsley, if desired.
- Serve hot and enjoy your comforting kielbasa soup!
