Instant Pot Pot Roast

To make Instant Pot pot roast, you’ll need:

Ingredients:

  • 3-4 pounds chuck roast
  • Salt and pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 carrots, peeled and chopped into large chunks
  • 4 potatoes, peeled and chopped into large chunks
  • 2 stalks celery, chopped into large chunks
  • 1 bay leaf

Instructions:

  1. Season the chuck roast generously with salt and pepper on all sides.
  2. Set your Instant Pot to sauté mode and add the vegetable oil. Once hot, add the seasoned chuck roast and sear on all sides until browned, about 3-4 minutes per side. Remove the roast and set aside.
  3. Add the chopped onion to the Instant Pot and sauté for 2-3 minutes, or until softened. Add the minced garlic and sauté for an additional 1 minute.
  4. Pour in the beef broth, Worcestershire sauce, and tomato paste. Stir well to combine, scraping up any browned bits from the bottom of the pot.
  5. Add the dried thyme, dried rosemary, and bay leaf to the pot, stirring to combine.
  6. Return the seared chuck roast to the Instant Pot, along with any juices that have accumulated on the plate.
  7. Close and lock the lid of the Instant Pot, making sure the steam release valve is set to the sealing position.
  8. Cook on high pressure for 60 minutes. Once the cooking time is complete, allow for a natural pressure release for at least 10-15 minutes before manually releasing any remaining pressure.
  9. Carefully open the lid of the Instant Pot and add the chopped carrots, potatoes, and celery to the pot.
  10. Close and lock the lid again, setting the steam release valve to the sealing position.
  11. Cook on high pressure for an additional 5 minutes.
  12. Once the cooking time is complete, perform a quick pressure release by carefully turning the steam release valve to the venting position.
  13. Once the pressure has fully released and it’s safe to do so, carefully open the lid of the Instant Pot.
  14. Remove the chuck roast and vegetables from the Instant Pot and transfer them to a serving platter.
  15. Optional: If desired, you can thicken the sauce in the Instant Pot by setting it to sauté mode and simmering for a few minutes until slightly thickened.
  16. Serve the pot roast and vegetables hot, drizzled with the thickened sauce.
