To make Instant Pot pot roast, you’ll need:
Ingredients:
- 3-4 pounds chuck roast
- Salt and pepper, to taste
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1/4 cup Worcestershire sauce
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 4 carrots, peeled and chopped into large chunks
- 4 potatoes, peeled and chopped into large chunks
- 2 stalks celery, chopped into large chunks
- 1 bay leaf
Instructions:
- Season the chuck roast generously with salt and pepper on all sides.
- Set your Instant Pot to sauté mode and add the vegetable oil. Once hot, add the seasoned chuck roast and sear on all sides until browned, about 3-4 minutes per side. Remove the roast and set aside.
- Add the chopped onion to the Instant Pot and sauté for 2-3 minutes, or until softened. Add the minced garlic and sauté for an additional 1 minute.
- Pour in the beef broth, Worcestershire sauce, and tomato paste. Stir well to combine, scraping up any browned bits from the bottom of the pot.
- Add the dried thyme, dried rosemary, and bay leaf to the pot, stirring to combine.
- Return the seared chuck roast to the Instant Pot, along with any juices that have accumulated on the plate.
- Close and lock the lid of the Instant Pot, making sure the steam release valve is set to the sealing position.
- Cook on high pressure for 60 minutes. Once the cooking time is complete, allow for a natural pressure release for at least 10-15 minutes before manually releasing any remaining pressure.
- Carefully open the lid of the Instant Pot and add the chopped carrots, potatoes, and celery to the pot.
- Close and lock the lid again, setting the steam release valve to the sealing position.
- Cook on high pressure for an additional 5 minutes.
- Once the cooking time is complete, perform a quick pressure release by carefully turning the steam release valve to the venting position.
- Once the pressure has fully released and it’s safe to do so, carefully open the lid of the Instant Pot.
- Remove the chuck roast and vegetables from the Instant Pot and transfer them to a serving platter.
- Optional: If desired, you can thicken the sauce in the Instant Pot by setting it to sauté mode and simmering for a few minutes until slightly thickened.
- Serve the pot roast and vegetables hot, drizzled with the thickened sauce.
