MEXICAN TACO LASAGNA

Ingredients:

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 cup frozen corn kernels

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion and minced garlic, and cook until the onion is softened.

  12. Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.
