Here’s a recipe for Homemade New York Style Strawberry Cheesecake:

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the cheesecake filling:

  • 32 oz (4 packages) cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 4 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 2 teaspoons vanilla extract
  • 1/4 cup all-purpose flour

For the strawberry topping:

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/4 cup water

Instructions:

  1. Preheat the oven and prepare the crust:
  • Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
  • In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  • Press the mixture evenly into the bottom of the prepared springform pan. Use the bottom of a glass to help pack it down firmly.
  • Bake the crust in the preheated oven for 10 minutes. Remove from the oven and set aside to cool while you prepare the filling.
  1. Make the cheesecake filling:
  • In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.
  • Add the eggs, one at a time, beating well after each addition.
  • Stir in the sour cream, heavy cream, and vanilla extract until well combined.
  • Gradually add the flour and mix until smooth and no lumps remain.
  1. Pour the filling over the crust:
  • Pour the cheesecake filling over the cooled crust in the springform pan.
  • Tap the pan gently on the counter to release any air bubbles.
  1. Bake the cheesecake:
  • Place the springform pan on a baking sheet to catch any drips.
  • Bake the cheesecake in the preheated oven for 60-70 minutes, or until the edges are set and the center is slightly jiggly.
  • Turn off the oven and leave the cheesecake inside with the oven door slightly ajar for 1 hour to cool gradually.
  • Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight to chill and set.
  1. Make the strawberry topping:
  • In a saucepan, combine the sliced strawberries, sugar, and lemon juice. Cook over medium heat until the strawberries release their juices and become soft, about 5-7 minutes.
  • In a small bowl, mix the cornstarch and water to make a slurry. Add the slurry to the strawberry mixture and cook until thickened, stirring constantly.
  • Remove from heat and let the strawberry topping cool completely.
  1. Assemble and serve:
  • Once the cheesecake is chilled and set, remove it from the springform pan.
  • Spoon the cooled strawberry topping over the cheesecake.
