Crockpot Pepper Steak

Here’s a simple recipe for Crockpot Pepper Steak:

Ingredients:

  • 2 lbs beef steak (such as flank steak or sirloin), thinly sliced against the grain
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup beef broth
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 2 tablespoons vegetable oil
  • Cooked rice or noodles, for serving
  • Sesame seeds and chopped green onions, for garnish (optional)

Instructions:

  1. In a large skillet, heat the vegetable oil over medium-high heat. Add the sliced beef in batches and cook until browned on all sides. Transfer the browned beef to the slow cooker.
  2. In the same skillet, add the sliced onions, bell peppers, and minced garlic. Cook until the vegetables are slightly softened, about 3-4 minutes. Transfer the cooked vegetables to the slow cooker.
  3. In a small bowl, whisk together the soy sauce, brown sugar, and beef broth. Pour the sauce over the beef and vegetables in the slow cooker. Stir to combine.
  4. Cover and cook on low heat for 6-8 hours or high heat for 3-4 hours, or until the beef is tender.
  5. In a small bowl, mix together the cornstarch and water to create a slurry. Stir the slurry into the slow cooker during the last 30 minutes of cooking to thicken the sauce.
  6. Once the sauce has thickened, serve the crockpot pepper steak over cooked rice or noodles. Garnish with sesame seeds and chopped green onions, if desired.
  7. Enjoy your delicious and flavorful crockpot pepper steak!
