  • 150–200 g dark or milk chocolate (for dipping)

Method 👩‍🍳

  1. Cream: Beat butter and icing sugar until very pale, soft, and fluffy (3–5 minutes).
  2. Flavour: Mix in vanilla and egg white (if using).
  3. Dry mix: Sift in flour and salt. Mix just until smooth. Dough should be soft enough to pipe, not stiff.
  4. Pipe: Using a large open star nozzle (1M or 2D), pipe S or W shapes onto a lined tray. Chill tray for 20 minutes to help cookies hold their shape.
  5. Bake: Bake at 170°C for 12–15 minutes until edges are lightly golden (not brown).
  6. Cool: Let cookies cool completely on a wire rack.
  7. Dip: Melt chocolate (double boiler or microwave). Dip half of each cookie, place on parchment, and let chocolate set.
