Ingredients
- 2 pounds (900 g) beef chuck, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 3 carrots, sliced
- 3 celery stalks, chopped
- 3 large potatoes, peeled and cubed
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- ¼ cup (30 g) all-purpose flour
- 4 cups (1 liter) beef broth
- 1 cup (240 ml) red wine (optional)
- Salt & black pepper, to taste
- Fresh parsley, chopped (for garnish)

- Brown beef: Heat olive oil in a large pot. Toss beef cubes in flour, then sear until browned on all sides. Remove and set aside.
- Sauté aromatics: In the same pot, cook onion and garlic until fragrant. Stir in tomato paste.
- Add vegetables: Add carrots, celery, and potatoes. Cook for 5 minutes, stirring occasionally.
- Simmer: Return beef to pot. Add beef broth, red wine (if using), thyme, rosemary, bay leaf, salt, and pepper. Bring to a boil, then reduce heat.
- Cook: Cover and simmer gently for 1½–2 hours until beef is tender and vegetables are cooked through.
- Finish: Remove bay leaf. Adjust seasoning. Garnish with fresh parsley before serving.
