Ingredients

For the Filling
- 250 g chicken fillet, diced
- 250 g broccoli, chopped
- 1 medium onion, finely chopped
- 1 medium carrot, grated or finely diced
- 110 g mushrooms, sliced
- 3 garlic cloves, minced
- 2 bay leaves
- 30 g butter
- Vegetable oil, as needed
- Salt & black pepper, to taste
- 1 tsp Provencal herbs
- 2 eggs, beaten
- 70 g cheese (cheddar or mozzarella), grated
Step-by-Step Directions 👩🍳
- Bake potatoes: Preheat oven to 180°C (356°F). Rub potatoes with oil and salt, wrap in foil, and bake 60–80 minutes until tender.
- Blanch broccoli: Boil for 3 minutes with a pinch of salt, drain, and set aside.
- Sauté aromatics: Heat oil, cook onion 1–2 minutes, add carrot, and sauté 2–3 minutes more.
- Cook chicken & mushrooms: Add diced chicken, cook 5–7 minutes. Add mushrooms, cook until tender. Season with salt, pepper, herbs. Add garlic, bay leaves, and butter. Simmer briefly.
- Hollow potatoes: Slice tops, scoop out flesh, leaving shells intact. Save flesh for filling.
- Mix filling: Combine chicken-mushroom mix, broccoli, scooped potato flesh, and beaten eggs. Mix well.
- Stuff & top: Fill potato shells with mixture. Sprinkle grated cheese on top.
- Final bake: Bake at 180°C for 20 minutes until cheese is golden and bubbly. Rest before serving.
