Grandma’s Italian Yogurt Cake 🇮🇹🍰
A rustic, moist cake made with yogurt, apples, raisins, and lemon zest—perfectly simple and full of flavor.
Ingredients 🥄
- 3 eggs
- 1 pot of yogurt (125 g)
- 1 jar of sugar (70 g)
- 0.5 jar of milk (70 ml)
- ¾ jar of oil (80 ml)
- 4 jars of all-purpose flour (270 g)
- 11 g baking powder
- 3–4 tbsp raisins
- 1 apple, peeled and chopped
- Lemon juice and zest
- Grain sugar (for topping)
- Cake pan (22–24 cm)
Instructions 👩🍳
- Prep pan: Grease and flour a 22–24 cm cake pan. Preheat oven to 350°F (175°C).
- Mix wet: In a bowl, beat eggs with sugar until light and fluffy. Add yogurt, milk, oil, lemon juice, and zest. Mix well.
- Add dry: Sift flour with baking powder. Gradually fold into wet mixture until smooth.
- Fold in extras: Stir in raisins and chopped apple.
- Bake: Pour batter into prepared pan. Sprinkle grain sugar on top. Bake 35–40 minutes until golden and a toothpick comes out clean.
- Cool: Let cake rest 10 minutes before removing from pan. Serve warm or at room temperature.
