Ingredients

Cake Layers (Chocolate Sponge)

  • 1¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1½ tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot water or brewed coffee

Filling & Frosting

  • 2 cups heavy cream, whipped
  • 250 g cream cheese (optional, for stability)
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries, sliced
  • Optional: chocolate ganache drizzle

Instructions 👩‍🍳

  1. Prepare pans: Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. Mix dry: In a bowl, whisk flour, cocoa, baking powder, baking soda, and salt.
  3. Mix wet: In another bowl, beat eggs, sugars, milk, oil, and vanilla until smooth.
  4. Combine: Add dry mixture to wet. Stir in hot water/coffee until batter is smooth.
  5. Bake: Divide batter into pans. Bake 30–35 minutes until a toothpick comes out clean. Cool completely.
  6. Prepare filling: Whip cream with powdered sugar and vanilla. Fold in cream cheese if using.
  7. Assemble: Place one cake layer on a plate. Spread cream filling, add sliced strawberries. Top with second cake layer.
  8. Frost: Cover cake with remaining cream. Decorate with strawberries and drizzle ganache if desired.
  9. Serve: Chill 30 minutes before slicing for neat layers.

Tips

  • Extra rich: Use brewed coffee instead of hot water for deeper chocolate flavor.
  • Stability: Add cream cheese to whipped cream for firmer frosting.
  • Decoration: Garnish with chocolate shavings or whole strawberries.
