Ingredients
- 4 cups (500 g) all-purpose flour

- 2ÂĽ tsp (7 g) instant yeast
- ½ tsp (3 g) salt
- Âľ cup (180 ml) warm milk
- 2 large eggs
- ÂĽ cup (60 g) unsalted butter, softened
- 1 tsp vanilla extract
- Oil for frying
- Extra sugar, for coating

Directions
- Make dough: In a large bowl, combine flour, sugar, yeast, and salt. Add warm milk, eggs, butter, and vanilla. Mix until a soft dough forms.
- Knead: Knead dough on a floured surface for 8–10 minutes until smooth and elastic.
- Rise: Place dough in a greased bowl, cover, and let rise 1–2 hours until doubled in size.
- Shape: Punch down dough. Divide into small balls (about 12–15). Place on a tray, cover, and let rise 30 minutes.
- Fry: Heat oil to 350°F (175°C). Fry doughnuts in batches until golden brown, about 2–3 minutes per side.
- Coat: Drain on paper towels. Roll warm doughnuts in sugar.
- Optional filling: Use a piping bag to fill with custard, chocolate spread, or jam.
- Serve: Enjoy fresh and fluffy, best eaten warm.
