A lighter take on the classic spanakopita—no crust, just creamy spinach, eggs, and cheese baked golden.
Ingredients
- 2 cups fresh or frozen spinach (thawed and drained)
- 1 cup feta cheese, crumbled
- ½ cup ricotta cheese (optional)
- ½ cup grated Parmesan cheese
- ½ cup shredded mozzarella cheese
- 4 large eggs
- Salt & black pepper, to taste
- Optional: fresh dill or parsley for extra flavor
Directions
- Preheat oven: Set oven to 375°F (190°C). Grease a baking dish.
- Mix filling: In a large bowl, whisk eggs. Stir in spinach, feta, ricotta (if using), Parmesan, mozzarella, salt, pepper, and herbs.
- Assemble: Pour mixture into prepared dish. Smooth the top.
- Bake: Bake 30–35 minutes until golden and set in the center.
- Serve: Let cool slightly before slicing. Enjoy warm or at room temperature.
