Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 garlic cloves, minced

- ½ tsp black pepper
- 2 cups cooked white rice
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup sour cream
- 1½ cups shredded cheddar cheese, divided
- ½ cup milk
- 1 cup frozen peas and carrots mix
- Fresh parsley, for garnish
Directions
- Preheat oven: Set oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Sauté aromatics: Heat olive oil in skillet. Add onion and garlic, cook until soft.
- Cook beef: Add ground beef, paprika, salt, and pepper. Cook until browned. Drain excess grease.
- Mix casserole: Stir in cooked rice, cream of mushroom soup, sour cream, milk, peas and carrots, and 1 cup cheddar cheese. Mix well.
- Layer: Spread mixture into baking dish. Top with remaining ½ cup cheddar cheese.
