A comforting twist on classic meatloaf—juicy beef mixed with French onion flavors, topped with caramelized onions and gooey Swiss cheese.

Ingredients

  • 2 pounds ground beef
  • 1 packet French onion soup mix
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • ¼ cup ketchup
  • ¼ cup milk
  • 1 tbsp Worcestershire sauce
  • Salt and pepper, to taste
  • 1 cup caramelized onions
  • 6 slices Swiss cheese

Directions

  1. Preheat oven: Set oven to 375°F (190°C). Grease a loaf pan or line with parchment paper.
  2. Mix meatloaf: In a large bowl, combine ground beef, soup mix, breadcrumbs, eggs, ketchup, milk, Worcestershire sauce, salt, and pepper. Mix until just combined.
  3. Shape & bake: Transfer mixture to loaf pan. Shape evenly. Bake 45–50 minutes until cooked through.
  4. Top with onions & cheese: Remove from oven, spread caramelized onions over meatloaf, then layer Swiss cheese slices on top.
  5. Finish baking: Return to oven for 5–7 minutes until cheese melts and bubbles.
  6. Serve: Let rest 5 minutes before slicing. Enjoy warm.

Tips

  • Extra flavor: Add fresh thyme or rosemary to the meat mixture.
  • Cheese swap: Gruyère or provolone works beautifully too.
  • Serving idea: Pair with mashed potatoes or roasted green beans.
