Ingredients

For the Crust and Topping

  • Pinch of salt
  • 1½ cups all-purpose flour
  • ¾ cup butter, cold and cubed
  • ½ cup granulated sugar

For the Pineapple Filling

  • 1 can (20 oz) crushed pineapple, with juice
  • ½ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven: Set oven to 350°F (175°C). Grease or line a 9×9-inch baking pan.
  2. Make crust: In a bowl, mix flour, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Press half into the bottom of the pan for the crust.
  3. Prepare filling: In a saucepan, combine pineapple, sugar, cornstarch, and vanilla. Cook over medium heat until thickened, about 5–7 minutes. Cool slightly.
  4. Assemble: Spread pineapple filling evenly over crust. Sprinkle remaining crumb mixture on top as the topping.
  5. Bake: Bake for 30–35 minutes until golden brown. Cool completely before cutting into bars.
  6. Serve: Slice into squares and enjoy as a snack or dessert.
