Ingredients
For the Crust and Topping
- Pinch of salt
- 1½ cups all-purpose flour
- ¾ cup butter, cold and cubed
- ½ cup granulated sugar
For the Pineapple Filling
- 1 can (20 oz) crushed pineapple, with juice
- ½ cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
Instructions
- Preheat oven: Set oven to 350°F (175°C). Grease or line a 9×9-inch baking pan.
- Make crust: In a bowl, mix flour, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Press half into the bottom of the pan for the crust.
- Prepare filling: In a saucepan, combine pineapple, sugar, cornstarch, and vanilla. Cook over medium heat until thickened, about 5–7 minutes. Cool slightly.
- Assemble: Spread pineapple filling evenly over crust. Sprinkle remaining crumb mixture on top as the topping.
- Bake: Bake for 30–35 minutes until golden brown. Cool completely before cutting into bars.
- Serve: Slice into squares and enjoy as a snack or dessert.
