Instructions

  1. Activate Yeast: In a small bowl, dissolve yeast in warm milk with a teaspoon of sugar. Let sit 5–10 minutes until foamy.
  2. Mix Dough: In a large bowl, combine flour, sugar, salt, egg yolks, melted butter, vanilla, and lemon zest. Add yeast mixture and knead until smooth and elastic (about 8–10 minutes).
  3. Rise: Cover bowl with a cloth and let dough rise in a warm place for 1–2 hours until doubled in size.
  4. Shape: Punch down dough, divide into small balls (about 2 inches wide). Place on a floured surface, cover, and let rise again for 30 minutes.
  5. Fry: Heat oil to 350°F (175°C). Fry doughnuts in batches until golden brown on both sides, about 2–3 minutes per side. Drain on paper towels.
  6. Fill: Once cooled slightly, use a piping bag to fill with jam or custard.
  7. Finish: Dust generously with powdered sugar before serving.
