Ingredients

  • ⅓ cup self-rising flour
  • ⅓ cup low-fat buttermilk
  • Oil or butter for frying
  • Pinch of salt (optional)

Instructions

  1. Mix Batter: In a bowl, combine cornmeal, flour, and buttermilk. Stir until smooth and thick.
  2. Heat Pan: Place a skillet over medium heat and add a little oil or butter.
  3. Cook Hoecakes: Drop spoonfuls of batter into the skillet. Flatten slightly with the back of the spoon.
  4. Fry: Cook 2–3 minutes per side until golden brown and crispy.
  5. Serve: Enjoy hot with butter, honey, or alongside beans and greens.
