Ingredients
- ⅔ cup cornmeal
- ⅓ cup self-rising flour
- ⅓ cup low-fat buttermilk
- Oil or butter for frying

Instructions
- Mix Batter: In a bowl, combine cornmeal, flour, and buttermilk. Stir until smooth and thick.
- Heat Pan: Place a skillet over medium heat and add a little oil or butter.
- Cook Hoecakes: Drop spoonfuls of batter into the skillet. Flatten slightly with the back of the spoon.
- Fry: Cook 2–3 minutes per side until golden brown and crispy.
- Serve: Enjoy hot with butter, honey, or alongside beans and greens.
