Ingredients

  • 1 lb ground beef
  • 4 cups potatoes, chopped (Russet or Yukon Gold recommended)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) tomato sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 cup shredded cheese (optional, for topping)
  • Sour cream & chopped chives (optional, for garnish)

Instructions

  1. Prep: Brown ground beef in a skillet over medium heat. Drain excess fat. Chop potatoes into bite-sized pieces.
  2. Layer: Place potatoes at the bottom of the slow cooker. Add beef, beans, and corn. Pour tomato sauce over the top and sprinkle with seasonings. Repeat layers if needed.
  3. Cook: Cover and cook on low for 6–8 hours or high for 3–4 hours until potatoes are tender.
  4. Finish: In the last 30 minutes, sprinkle shredded cheese on top and let it melt.
  5. Serve: Garnish with sour cream and chives if desired. Enjoy warm!
