Ingredients

For the Dough (20 cm pie)

  • 250 g (2 cups) flour
  • 1 tsp baking powder
  • 90 g (6 tbsp) butter
  • Pinch of salt
  • 2 egg yolks
  • 40 g (3 tbsp) sugar

For the Apple Layer

  • 3 apples (~500 g)
  • 40 g (3 tbsp) sugar
  • 4–5 tbsp lemon juice

For the Cream-Soufflé

  • 2 egg whites
  • 40 g (3 tbsp) sugar
  • 1 tsp vanilla sugar
  • 400 g (1⅔ cups) natural yogurt or sour cream
  • 30 g (3 tbsp) cornstarch

Instructions

  1. Prepare Dough: Mix flour, baking powder, salt, sugar, and butter until crumbly. Add yolks and knead into soft dough. Press into a greased 20 cm pie pan.
  2. Prepare Apples: Peel and slice apples. Toss with sugar and lemon juice. Spread evenly over dough base.
  3. Make Soufflé Cream: Beat egg whites until foamy. Gradually add sugar and vanilla sugar, whipping to soft peaks. Fold in yogurt (or sour cream) and cornstarch until smooth.
  4. Assemble: Pour soufflé cream over apple layer, spreading evenly.
  5. Bake: Bake at 180°C (350°F) for 35–40 minutes, until golden and set. Cool slightly before serving.
