- ½ small yellow onion, finely diced
- Âľ cup (75 g) dry breadcrumbs
- ½ cup (55 g) shredded sharp cheddar cheese

- 2 large eggs, beaten
- ½ tsp fine sea salt

- 1 tsp olive or vegetable oil (for pan)

- Prep the Broccoli: Thaw broccoli in a strainer for 30 minutes. Press with paper towels to remove moisture. Chop finely into rice-sized pieces.
- Sauté Aromatics: Melt butter in skillet over medium heat. Add onion and garlic; cook 4–5 minutes until soft. Cool 5 minutes.
- Mix the Base: In a large bowl, combine broccoli, onion-garlic mix, breadcrumbs, cheeses, salt, and pepper. Stir well. Add eggs and mix until mixture holds together. Adjust with water or breadcrumbs if needed.
