Ingredients
For the Crust
- 1½ cups almonds 🌰
- 1 cup Medjool dates, pitted 🌴
- ¼ tsp salt 🧂
For the Cheesecake Filling
- 2 cups raw cashews, soaked overnight 🥜
- ½ cup coconut cream 🥥
- ½ cup maple syrup 🍯
- ¼ cup coconut oil, melted 🥥
- ¼ cup lemon juice 🍋
- 1 tsp vanilla extract 🍦
For the Berry Layer
- 1 cup mixed fresh or frozen berries (blueberries, raspberries, etc.) 🍓🍇
- 1 tbsp maple syrup 🍯
For Garnish
- Fresh berries 🍓
- Edible flowers 🌸
Directions
- Prepare the Crust: In a food processor, pulse almonds, dates, and salt until sticky. Press evenly into a parchment-lined 8×8-inch pan. Chill in freezer while preparing filling.
- Make the Filling: Blend soaked cashews, coconut cream, maple syrup, coconut oil, lemon juice, and vanilla until smooth. Spread half over crust and freeze 30 minutes.
- Create the Berry Layer: Blend remaining filling with berries and maple syrup until smooth. Pour over base layer and smooth top. Freeze at least 4 hours until set.
- Slice & Garnish: Remove from freezer, let sit 10 minutes, then slice into bars. Garnish with berries and edible flowers.
- Serve: Enjoy chilled or at room temperature.
