Ingredients
For the Base
- 1¼ cups gluten-free oat flour 🌾
- ⅓ cup coconut oil, melted 🥥
- ¼ cup maple syrup 🍯
- ¼ tsp salt 🧂
For the Passionfruit Layer
- ½ cup passionfruit pulp (fresh or canned) 🥭
- ¼ cup coconut cream 🥥
- ¼ cup maple syrup 🍯
- 2 tbsp cornstarch 🌟
- ½ tsp vanilla extract 🍦
For the Chocolate Layer
- 1 cup vegan dark chocolate, melted 🍫
- 1 tsp coconut oil 🥥
Directions
- Prepare the Base: Preheat oven to 350°F (175°C). Mix oat flour, coconut oil, maple syrup, and salt until crumbly. Press into a lined 8×8-inch baking dish. Bake 10–12 minutes until lightly golden. Cool completely.
- Make the Passionfruit Layer: In a saucepan, whisk passionfruit pulp, coconut cream, maple syrup, cornstarch, and vanilla. Cook over medium heat, stirring constantly, until thickened. Cool slightly, then spread over base. Chill 30 minutes.
- Add the Chocolate Layer: Melt chocolate with coconut oil. Pour over chilled passionfruit layer and spread evenly. Chill at least 1 hour until set.
- Slice & Serve: Remove from dish, slice into bars, and serve chilled or at room temperature.
