Rich chocolate meets tangy passionfruit in these stunning vegan, gluten-free dessert bars!

Ingredients

For the Base

  • 1¼ cups gluten-free oat flour 🌾
  • ⅓ cup coconut oil, melted 🥥
  • ¼ cup maple syrup 🍯
  • ¼ tsp salt 🧂

For the Passionfruit Layer

  • ½ cup passionfruit pulp (fresh or canned) 🥭
  • ¼ cup coconut cream 🥥
  • ¼ cup maple syrup 🍯
  • 2 tbsp cornstarch 🌟
  • ½ tsp vanilla extract 🍦

For the Chocolate Layer

  • 1 cup vegan dark chocolate, melted 🍫
  • 1 tsp coconut oil 🥥

Directions

  1. Prepare the Base: Preheat oven to 350°F (175°C). Mix oat flour, coconut oil, maple syrup, and salt until crumbly. Press into a lined 8×8-inch baking dish. Bake 10–12 minutes until lightly golden. Cool completely.
  2. Make the Passionfruit Layer: In a saucepan, whisk passionfruit pulp, coconut cream, maple syrup, cornstarch, and vanilla. Cook over medium heat, stirring constantly, until thickened. Cool slightly, then spread over base. Chill 30 minutes.
  3. Add the Chocolate Layer: Melt chocolate with coconut oil. Pour over chilled passionfruit layer and spread evenly. Chill at least 1 hour until set.
  4. Slice & Serve: Remove from dish, slice into bars, and serve chilled or at room temperature.
