Ingredients (for 2 medium pizzas)

  • 2½ cups bread flour (320 g)
  • 1â…“ cups cake flour (160 g)
  • 3 tbsp sugar
  • 1 tsp salt
  • 2ÂĽ tsp instant yeast (1 packet)
  • 1â…› cups warm water (about 270 ml)
  • 1½ tbsp unsalted butter, softened

Instructions

  1. Activate Yeast: In a bowl, combine warm water and sugar. Sprinkle yeast on top and let sit for 5–10 minutes until foamy.
  2. Mix Dough: In a large bowl, combine bread flour, cake flour, and salt. Add yeast mixture and butter. Mix until a shaggy dough forms.
  3. Knead: Knead dough on a floured surface for 8–10 minutes until smooth and elastic.
  4. First Rise: Place dough in a greased bowl, cover, and let rise in a warm spot for 1–1½ hours until doubled.
  5. Shape: Punch down dough and divide in half. Shape each into a ball. Let rest 10 minutes before rolling out.
  6. Top & Bake: Preheat oven to 475°F (245°C). Roll out dough, add toppings, and bake 12–15 minutes until golden and bubbly.
