Ingredients

  • 1 cup unsalted butter, softened
  • 4 oz full-fat cream cheese, softened
  • 1 cup granulated sugar
  • 1 large egg yolk, room temperature
  • 2 tsp pure vanilla extract
  • 2½ cups all-purpose flour
  • ¼ tsp fine sea salt
  • 1½ cups (188 g) confectioners’ sugar, for rolling

Instructions

  1. Prepare Dough: Beat butter and cream cheese until smooth (2–3 min). Add granulated sugar; beat until fluffy (2 min). Mix in egg yolk and vanilla.
  2. Incorporate Dry Ingredients: Whisk flour and salt. Gradually mix into wet ingredients on low speed until soft dough forms. Do not overmix.
  3. Chill: Divide dough into two disks. Wrap and refrigerate at least 2 hours until firm.
  4. Prepare Oven & Pans: Preheat oven to 375°F (190°C). Line baking sheets with parchment. Place confectioners’ sugar in shallow bowl.
  5. Shape & Coat: Scoop 1 tbsp portions. Roll into balls, then coat generously in confectioners’ sugar. Space 2 inches apart on baking sheets.
  6. Bake: Bake 12–14 min until edges are set and tops crack. Centers should stay soft.
  7. Cool: Cool 5 min on sheet. Optionally roll again in sugar for extra snowy finish. Transfer to wire rack to cool completely.
