Ingredients

  • 4 large egg yolks
  • ½ cup granulated sugar
  • 2 tbsp Dutch-processed cocoa powder
  • ¼ tsp ground cinnamon
  • ⅛ tsp ground nutmeg (plus more for garnish)
  • ⅛ tsp fine sea salt
  • 2 cups whole milk
  • 1 cup heavy whipping cream
  • 1 tsp pure vanilla extract
  • ½ cup finely chopped semi-sweet chocolate or chocolate chips
  • Whipped cream & chocolate shavings (optional)

Instructions

  1. Prepare Base: Whisk egg yolks and sugar until pale and thick (2–3 min). Add cocoa, cinnamon, nutmeg, and salt to form a smooth paste.
  2. Heat Dairy: Warm milk and cream in saucepan until steaming (do not boil).
  3. Temper Eggs: Slowly whisk 1 cup hot milk into yolk mixture. Return combined mixture to saucepan with remaining milk.
  4. Cook Custard: Stir constantly over medium-low until thickened and 165°F (74°C), about 8–10 min. Do not boil.
  5. Melt Chocolate: Remove from heat. Stir in chopped chocolate and vanilla until smooth.
  6. Chill: Strain through fine sieve into bowl. Cover with plastic wrap directly on surface. Refrigerate ≥4 hrs until cold.
  7. Serve: Stir well, pour into glasses, and top with whipped cream, nutmeg, and chocolate shavings.
