A rustic, hearty soup for beer lovers—dark beer, caramelized onions, and crispy pretzel croutons topped with cheddar!
Ingredients
For the Soup
- 4 large yellow onions, thinly sliced
- 3 tbsp butter
- 2 tbsp olive oil
- 1 tsp sugar (optional, for caramelization)
- 3 garlic cloves, minced
- 2 cups dark beer (Stout or Belgian Dubbel)
- 4 cups beef or vegetable broth
- 1 tbsp Worcestershire sauce
- ½ tsp dried thyme
- ¼ cup brown sugar
- Salt & pepper, to taste
- 1 cup grated aged cheddar cheese
For the Pretzel Croutons
- 2 large pretzels, cubed
- 2 tbsp butter, melted
Instructions
- Caramelize Onions: Heat butter and olive oil in a pot over medium heat. Add onions and sugar. Cook 30–40 minutes until deeply caramelized.
- Add Garlic & Deglaze: Stir in garlic for 1–2 minutes. Pour in beer, scraping browned bits. Simmer 5 minutes.
- Add Broth & Seasonings: Stir in broth, Worcestershire, thyme, and brown sugar. Bring to boil, then simmer 20 minutes. Season with salt and pepper.
- Pretzel Croutons: Toss pretzel cubes with melted butter. Bake at 375°F (190°C) for 10 minutes until golden.
- Assemble & Serve: Ladle soup into bowls. Top with pretzel croutons and sprinkle with cheddar.
