Ingredients

  • 1 tsp baking soda
  • ½ tsp salt
  • ¾ cup unsalted butter, softened
  • ¾ cup dark brown sugar
  • 2 large eggs
  • ¾ cup molasses
  • 1 cup buttermilk

For the Frosting

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3½ cups powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt

For Decoration

  • Sugared cranberries
  • Mini gingerbread cookies
  • Holly leaf decorations
  • Optional: edible glitter or gold dust

Instructions

  1. Prep: Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. Mix Dry: Whisk flour, spices, baking soda, and salt in a bowl.
  3. Cream Butter & Sugar: Beat butter and brown sugar until fluffy. Add eggs one at a time, then molasses.
  4. Combine: Add dry ingredients alternately with buttermilk. Mix until smooth.
  5. Bake: Divide batter between pans. Bake 30–35 minutes. Cool completely before frosting.
  6. Make Frosting: Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and salt. Beat until fluffy.
  7. Assemble: Layer cakes with frosting between and on top. Pipe decorative swirls.
  8. Decorate: Top with sugared cranberries, gingerbread cookies, and holly leaves.
