Ingredients

- ¾ cup molasses
- 1 cup buttermilk
For the Frosting
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 3½ cups powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
For Decoration
- Sugared cranberries
- Mini gingerbread cookies
- Holly leaf decorations
- Optional: edible glitter or gold dust
Instructions
- Prep: Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
- Mix Dry: Whisk flour, spices, baking soda, and salt in a bowl.
- Cream Butter & Sugar: Beat butter and brown sugar until fluffy. Add eggs one at a time, then molasses.
- Combine: Add dry ingredients alternately with buttermilk. Mix until smooth.
- Bake: Divide batter between pans. Bake 30–35 minutes. Cool completely before frosting.
- Make Frosting: Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and salt. Beat until fluffy.
- Assemble: Layer cakes with frosting between and on top. Pipe decorative swirls.
- Decorate: Top with sugared cranberries, gingerbread cookies, and holly leaves.
