Ingredients

Chocolate Crust

  • 1 ½ cups chocolate wafer cookie crumbs
  • ⅓ cup granulated sugar
  • 6 tbsp unsalted butter, melted

Fudge Layer

  • 1 cup semi-sweet chocolate chips
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ⅓ cup all-purpose flour
  • ¼ tsp salt

Coffee Mousse Layer

  • 1 ½ cups cold heavy whipping cream
  • 3 tbsp powdered sugar
  • 1 tsp instant espresso powder
  • 1 tsp vanilla extract

Garnish

  • Toasted pecans or chopped chocolate

Instructions

  1. Prepare Crust: Preheat oven to 350°F (175°C). Mix cookie crumbs and sugar. Stir in melted butter. Press into a 9-inch pie plate. Bake 8 minutes. Cool.
  2. Make Fudge Layer: Melt chocolate chips and butter over a double boiler. Cool slightly. Whisk in sugar, eggs (one at a time), vanilla, flour, and salt.
  3. Bake Base: Pour fudge batter into crust. Bake 20–25 minutes until top is set and crackled. Cool completely.
  4. Whip Mousse: In a chilled bowl, whip cream, powdered sugar, espresso powder, and vanilla until firm peaks form.
  5. Assemble: Spread mousse over cooled fudge layer.
  6. Chill & Serve: Refrigerate at least 4 hours. Garnish with pecans or chocolate before serving.
