Ingredients

For the Crust

  • 1½ cups crushed graham crackers
  • 2 tbsp granulated sugar
  • 6 tbsp unsalted butter, melted

For the Cheesecake Filling

  • 16 oz (450g) cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

For the Topping

  • 1 can cherry pie filling (or homemade cherry compote)

Instructions

  1. Preheat: Set oven to 325°F (163°C). Line a muffin tin with paper liners.
  2. Make Crust: Mix graham cracker crumbs, sugar, and melted butter. Press into bottom of each liner. Bake 5 minutes, then cool.
  3. Make Filling: Beat cream cheese and sugar until smooth. Add eggs and vanilla, mix until creamy.
  4. Fill: Spoon cheesecake mixture over crusts, filling each cup about ¾ full.
  5. Bake: Bake 18–20 minutes until centers are set. Cool completely.
  6. Top: Spoon cherry filling over each cooled cupcake. Chill at least 1 hour before serving.
