Ingredients

For the Base

  • 200g chocolate biscuits, crushed
  • 100g unsalted butter, melted

For the Mint Filling

  • 300g cream cheese, softened
  • 200g white chocolate, melted
  • 100ml heavy cream
  • 100g powdered sugar
  • 1 tsp peppermint extract
  • Green food coloring (optional)

For the Chocolate Ganache

  • 200g dark chocolate, chopped
  • 100ml heavy cream
  • 1 tsp unsalted butter (for glossy finish)

Directions

  1. Prepare Base: Line 20cm (8-inch) square tin with parchment. Mix biscuits with butter. Press firmly into base. Chill 20 minutes.
  2. Mint Filling: Beat cream cheese + sugar until smooth. Fold in melted white chocolate. Whip cream to soft peaks, fold in. Add peppermint + coloring. Spread over base. Chill 1 hour.
  3. Ganache: Warm cream (do not boil). Pour over chocolate, stir smooth. Add butter for shine. Spread over mint layer.
  4. Chill & Serve: Refrigerate 3–4 hours (or overnight) until set. Slice and serve chilled.
