Ingredients

For the Fried Mushrooms

  • 1 cup buttermilk
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs or panko
  • 1 lb mushrooms (button, cremini, or oyster – cleaned & stems trimmed)
  • 1/2 cup cornstarch
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper (optional)
  • Vegetable oil (for frying)

For the Cool Ranch Dip

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream or Greek yogurt
  • 1 tsp lemon juice or vinegar
  • 1/2 tsp dried dill
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh parsley or chives (optional)

Directions

  1. Prep Mushrooms: Clean mushrooms and trim stems if needed. Keep whole for juiciness.
  2. Soak: Mix buttermilk, garlic powder, paprika, salt, and pepper. Add mushrooms, coat well, and soak 30 minutes.
  3. Breading Station: In one bowl, mix flour + cornstarch. In another, mix breadcrumbs, salt, pepper, and cayenne.
  4. Coat: Dredge mushrooms in flour mix, dip back into buttermilk, then coat in breadcrumbs. Let sit 5 minutes.
  5. Fry: Heat oil to 350°F (175°C). Fry mushrooms in batches 3–4 minutes until golden. Drain on paper towels. Sprinkle with salt.
  6. Dip: Mix mayonnaise, sour cream, lemon juice, dill, garlic powder, onion powder, salt, and pepper. Add parsley/chives. Chill 15 minutes.
  7. Serve: Pair crispy mushrooms with cool ranch dip. Enjoy hot and crunchy!
