🍋 Zesty Lemon Pie Delight ✨

A buttery shortbread crust filled with tangy lemon topping—fresh, bright, and irresistibly delicious!

Ingredients

For the Shortbread

  • 200 g flour
  • 50 g sugar
  • 1 egg yolk
  • 1 tbsp cold water (if necessary)
  • 100 g cold butter, cubed

For the Lemon Topping

  • 3 eggs
  • 200 g sugar
  • 100 g melted butter
  • 1 tbsp grated lemon zest
  • 150 ml fresh lemon juice (3–4 lemons)

Preparation

  1. Preheat: Set oven to 180°C (350°F). Lightly butter a 23 cm pie mold.
  2. Make Shortbread: Mix flour, sugar, and butter until coarse. Add egg yolk and mix until dough forms. If dry, add cold water gradually. Roll out dough, press into mold, poke with fork, and refrigerate 15 minutes.
  3. Bake Crust: Bake 15 minutes. Cool.
  4. Prepare Filling: Whisk eggs and sugar until light. Add lemon juice, melted butter, and zest. Mix well.
  5. Bake Pie: Pour filling over crust. Bake 20–25 minutes until set and lightly golden at edges.
  6. Cool & Serve: Let cool completely. Decorate with icing sugar or extra zest if desired.
