🍔🧀 Cheeseburger Soup – Creamy & Comforting 🍲

Ingredients
- 4 tbsp butter, divided
- 1/2 lb lean ground beef
- 3/4 cup chopped onion
- 3/4 cup shredded carrots
- 3/4 cup chopped celery
- 1 tsp dried basil
- 1 tsp dried parsley
- 4 cups cubed potatoes
- 3 cups chicken broth
- 1/4 cup all-purpose flour
- 1 1/2 cups milk
- 2 cups cubed Cheddar cheese
- 1/4 cup sour cream
Directions
- Sauté Ingredients: Melt 1 tbsp butter in large pot. Add beef, onion, carrots, and celery. Cook 5–7 minutes until beef is browned.
- Add Seasoning & Potatoes: Stir in basil and parsley. Add potatoes and broth. Bring to boil, then simmer 10–12 minutes until potatoes are tender.
- Prepare Sauce: In saucepan, melt remaining 3 tbsp butter. Whisk in flour for 1 minute. Gradually whisk in milk until smooth and thickened.
- Combine: Stir sauce into soup pot. Bring to gentle boil, then reduce to simmer.
- Add Cheese & Sour Cream: Stir in Cheddar until melted. Add sour cream and heat through.
- Serve: Ladle into bowls. Garnish with bacon, extra cheese, or green onions if desired.
