Ingredients

  • 1/2 cup cold butter, cubed
  • 1/2 cup buttermilk
  • Zest of 1 lemon
  • 1 tbsp fresh lemon juice
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix flour, sugar, baking powder, salt, and baking soda.
  3. Add cold butter and cut into the flour using a pastry cutter or fork until crumbly.
  4. Stir in lemon zest and lemon juice.
  5. Gradually add buttermilk and mix gently until dough just comes together.
  6. Turn dough onto a floured surface and pat into a 1-inch thick rectangle.
  7. Cut into rounds using a biscuit cutter or glass. Place on baking sheet.
  8. Bake for 10–12 minutes until golden brown.
  9. Dust with powdered sugar while still warm.
