This taco-inspired pasta is a weeknight winner—savory, creamy, and packed with flavor!
Ingredients
- 1 lb ground beef (or turkey)
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (14 oz) diced tomatoes
- 1 can (4 oz) diced green chilies (optional)
- 2 cups uncooked pasta (rotini, penne, or elbow)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro (optional)
- Salt and pepper to taste
Directions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add ground beef, onion, and garlic. Cook until beef is browned and onion is soft (6–8 minutes).
- Stir in taco seasoning, diced tomatoes, and green chilies. Simmer for 5–7 minutes.
- Add cooked pasta to the skillet and toss to combine.
- Stir in cheddar cheese and sour cream. Season with salt and pepper. Cook for 2–3 minutes until cheese melts and sauce is creamy.
- Serve hot, garnished with fresh cilantro if desired.
