This taco-inspired pasta is a weeknight winner—savory, creamy, and packed with flavor!

Ingredients

  • 1 lb ground beef (or turkey)
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (14 oz) diced tomatoes
  • 1 can (4 oz) diced green chilies (optional)
  • 2 cups uncooked pasta (rotini, penne, or elbow)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional)
  • Salt and pepper to taste

Directions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef, onion, and garlic. Cook until beef is browned and onion is soft (6–8 minutes).
  3. Stir in taco seasoning, diced tomatoes, and green chilies. Simmer for 5–7 minutes.
  4. Add cooked pasta to the skillet and toss to combine.
  5. Stir in cheddar cheese and sour cream. Season with salt and pepper. Cook for 2–3 minutes until cheese melts and sauce is creamy.
  6. Serve hot, garnished with fresh cilantro if desired.
