A decadent fusion of cheesecake and Boston cream pie—layers of chocolate, pastry cream, and creamy cheesecake!
Ingredients
For the Crust
- 2 cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ½ cup dark chocolate, melted
For the Cheesecake Filling
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- ½ cup sour cream
For the Pastry Cream Layer
- 1 cup whole milk
- ¼ cup granulated sugar
- 2 egg yolks
- 1 tablespoon cornstarch
- ½ teaspoon vanilla extract
- 1 tablespoon unsalted butter
For the Chocolate Ganache
- 1 cup semisweet chocolate chips
- ½ cup heavy cream
Instructions
Prepare the Crust
- Preheat oven to 325°F (163°C).
- Mix graham cracker crumbs with melted butter and dark chocolate.
- Press into a 9-inch springform pan.
- Bake for 10 minutes, then cool.
Make the Cheesecake Filling
- Beat cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well.
- Mix in sour cream.
- Pour over crust and bake for 45–50 minutes.
- Let cool, then refrigerate for 4 hours.
Prepare the Pastry Cream
- Heat milk and sugar in a saucepan.
- Whisk egg yolks with cornstarch, then slowly add hot milk while stirring.
- Return to heat and whisk until thickened.
- Stir in vanilla and butter. Cool completely.
Assemble the Layers
- Spread pastry cream over chilled cheesecake.
- Refrigerate for 30 minutes.
Make the Ganache
- Heat heavy cream and pour over chocolate chips.
- Stir until smooth, then spread over cheesecake.
Chill & Serve
- Refrigerate for 1 hour before slicing.
- Serve chilled and enjoy!
