Ingredients
- 4 large russet potatoes, peeled and cubed
- 1/2 lb bacon, chopped
- 1/2 lb breakfast sausage or Italian sausage, crumbled
- 1 small onion, finely chopped
- 1 cup cheddar cheese, shredded
- 1/4 cup sour cream
- 2 tbsp butter
- 1/4 cup milk
- Salt and pepper, to taste
- 1 tbsp fresh parsley, chopped (for garnish)
- 1/2 cup breadcrumbs (optional, for topping)
Instructions
- Prepare the Potatoes: Boil cubed potatoes until tender. Drain and mash with butter, milk, sour cream, salt, and pepper until smooth.
- Cook the Meats: In a skillet, cook bacon until crispy. Remove and drain. In the same skillet, cook sausage and onion until browned.
- Combine: Mix mashed potatoes with bacon, sausage, onion, and cheddar cheese until well combined.
- Shape the Loaf: Transfer mixture into a greased loaf pan. Smooth the top and sprinkle with breadcrumbs if desired.
- Bake: Bake at 375°F (190°C) for 25–30 minutes, until golden and set.
- Serve: Garnish with fresh parsley. Slice and serve warm.
