Ingredients

  • 2 lbs large shrimp, peeled and deveined
  • 20 oz refrigerated three-cheese tortellini
  • 1 tbsp olive oil
  • 8 tbsp unsalted butter, divided
  • 2 tbsp minced garlic
  • 1 tbsp all-purpose flour
  • 6 oz seafood or chicken broth
  • 4 oz cream cheese, softened
  • 2 cups heavy cream
  • 1 tsp dried basil
  • 5 oz fresh baby spinach
  • 1/4 tsp crushed red pepper flakes
  • 1/2 cup freshly grated Parmesan cheese
  • All-purpose seasoning for shrimp (e.g., garlic & herb blend, seasoning salt)

Instructions

  1. Season Shrimp: Toss shrimp with your all-purpose seasoning.
  2. Sear Shrimp: Heat olive oil in a large skillet over medium-high heat. Cook shrimp in batches 1–2 minutes per side until pink. Remove and set aside.
  3. Make the Sauce: Lower heat to medium. Add 6 tbsp butter and garlic, sauté 3 minutes until fragrant.
  4. Thicken Sauce: Stir in flour until smooth. Slowly whisk in broth, then add cream cheese. Stir until creamy.
  5. Add Cream & Basil: Pour in heavy cream and add dried basil. Simmer 5–7 minutes, stirring until thickened.
  6. Cook Tortellini: Prepare as directed on package. Drain and set aside.
  7. Combine & Serve: Stir spinach into sauce until wilted. Add red pepper flakes and Parmesan, stir until melted. Adjust seasoning with salt.
  8. Bring it Together: Add tortellini and shrimp to sauce, stir gently to coat. Serve warm.
