Ingredients

For the crust

  • 1 1/2 cups crushed crackers or breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup crumbled feta cheese
  • 1/4 cup unsalted butter, melted

For the filling

  • 2 cups cream cheese, softened
  • 1/2 cup sour cream
  • 2 large eggs
  • 1 cup finely chopped mushrooms
  • 1/3 cup chopped pistachios
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp black pepper
  • 1/4 tsp salt

For garnish

  • Chopped pistachios
  • Fresh thyme or parsley

Directions

  1. Preheat oven: Set to 350°F (175°C). Grease a 9-inch springform pan.
  2. Make crust: Mix crackers, Parmesan, feta, and melted butter. Press into pan base. Bake 10 minutes, then set aside.
  3. Prepare filling: Beat cream cheese and sour cream until smooth. Add eggs one at a time, beating well.
  4. Mix in flavor: Fold in mushrooms, pistachios, Parmesan, salt, and pepper.
  5. Assemble: Pour filling over crust and smooth the top.
  6. Bake: Bake 35–40 minutes until center is set. Cool to room temperature.
  7. Chill: Refrigerate at least 4 hours or overnight.
  8. Finish: Remove from pan, garnish with pistachios and herbs, and serve.
