Soft, buttery loaf studded with tart cranberries, crunchy pecans and pistachios, plus sweet white chocolate chips.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1/4 cup chopped pistachios
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat: Heat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Dry mix: Whisk flour, baking powder, and salt in a bowl.
  3. Cream: In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in milk and vanilla.
  4. Combine: Gradually add dry ingredients to wet, mixing just until smooth.
  5. Fold-ins: Stir in cranberries, pecans, pistachios, and white chocolate chips.
  6. Bake: Pour into pan and bake 55–60 minutes, until a toothpick comes out clean.
  7. Cool: Let cool in pan 10 minutes, then transfer to a wire rack to cool completely.
