Cinnamon Churro Cheesecake Bars 🧁🔥

Ingredients
For the crust
- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 4 tbsp unsalted butter, melted
- Pinch of salt
For the cheesecake layer
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 tbsp sour cream (optional, for extra creaminess)
For the churro topping
- 1/4 cup granulated sugar
- 1 tsp ground cinnamon
- 2 tbsp unsalted butter, melted
Instructions
- Prep: Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment, leaving overhang for easy lifting.
- Make the crust: Stir graham crumbs, sugar, salt, and melted butter until evenly moistened. Press firmly into the pan. Bake 8 minutes; set aside to cool slightly.
- Cheesecake filling: Beat cream cheese and sugar until smooth. Mix in egg, vanilla, and sour cream (if using) until silky. Pour over the warm crust and smooth the top.
- Churro topping: Combine sugar and cinnamon. Brush melted butter lightly over the cheesecake surface, then sprinkle the cinnamon sugar evenly.
- Bake: Bake 22–28 minutes until edges are set and center has a slight wobble. Do not overbake.
- Cool & chill: Cool to room temperature, then chill at least 3 hours (preferably overnight) until fully set.
- Slice & serve: Lift from the pan, cut into bars, and dust with extra cinnamon sugar if desired.
