For the Steak
- 2 beef tenderloin steaks (or sirloin steaks) 🥩
- 2 tbsp crushed black peppercorns 🌶️
- 1 tbsp olive oil 🫒
- 1 tbsp butter 🧈
- Salt, to taste 🧂
For the Sauce
- 1/2 cup brandy (or cognac) 🍷
- 1/2 cup heavy cream 🥛
- 1/4 cup beef stock 🥣
- 1 tbsp Dijon mustard 🍯
- 1 tbsp butter 🧈
- 1/4 cup shallots, finely chopped 🧅
- Fresh thyme, for garnish 🌿

- Prepare the Steaks: Press crushed peppercorns into both sides of the steaks, seasoning lightly with salt. Heat olive oil in a skillet over medium-high heat. Cook steaks 3–4 minutes per side for medium-rare. Remove and set aside.
- Make the Sauce: In the same skillet, melt butter and sauté shallots until translucent. Add brandy and reduce for 1–2 minutes. Stir in beef stock, Dijon mustard, and cream. Simmer 3–4 minutes until thickened.
- Finish the Dish: Return steaks to skillet and coat with sauce. Let rest in sauce for 1 minute.
- Serve: Plate steaks, pour sauce over, and garnish with fresh thyme. Serve with your favorite side dish.
