Snowball Cookies (Butter Pecan Cookies)
These melt-in-your-mouth cookies are buttery, nutty, and covered in powdered sugar — perfect for holidays or any sweet craving!
Ingredients:
- 1 cup (225 g) unsalted butter, softened
- 1/2 cup (65 g) powdered sugar
- 2 tsp vanilla extract
- 2 1/4 cups (280 g) all-purpose flour
- 1 cup (120 g) finely chopped pecans (or walnuts)
- 1/4 tsp salt
- Extra powdered sugar for coating
Instructions:
- Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper.
- In a large bowl, cream together butter and powdered sugar until smooth and creamy.
- Mix in vanilla extract.
- Add flour and salt, stirring until just combined.
- Fold in chopped pecans.
- Roll dough into small 1-inch balls and place them on the prepared baking sheet.
- Bake for 12–15 minutes, or until the bottoms are lightly golden (tops should stay pale).
- Let cookies cool for 5 minutes, then roll them in powdered sugar while still warm.
- Once completely cool, roll them again in powdered sugar for a perfect snowy coating.
Storage:
Store in an airtight container for up to a week. They also freeze beautifully!
