French Onion Ground Beef and Rice Casserole

Rich, creamy, and full of flavor — this casserole combines ground beef, rice, and French onion soup for the ultimate cozy comfort dish! 🧅🍚

Ingredients

  • 1 lb (450 g) ground beef
  • 1 small onion, finely chopped
  • 1 (10 oz) can French onion soup
  • 1 cup uncooked rice
  • 1 cup beef broth
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh thyme or parsley (for garnish)

Instructions

  1. Preheat oven: Set to 180°C (350°F).
  2. Cook the beef: In a skillet, melt butter and sauté chopped onion until soft. Add ground beef and cook until browned. Drain excess fat.
  3. Mix the base: In a large bowl, combine cooked beef, rice, French onion soup, and beef broth. Add salt and pepper to taste.
  4. Assemble: Pour the mixture into a greased baking dish and cover tightly with foil.
  5. Bake: Bake for 45–50 minutes, until rice is tender and most liquid is absorbed.
  6. Add cheese: Remove foil, sprinkle cheese on top, and bake for another 10 minutes until melted and golden.
  7. Serve: Garnish with fresh thyme or parsley and serve warm. Perfect with a green salad or garlic bread!

Tips

  • Use leftover rice for a faster version (reduce broth by half).
  • Add mushrooms for a richer flavor.
  • This dish freezes beautifully — reheat in the oven or microwave!
